YUM! There is something about the combination of crisp veggies paired with the creaminess of feta cheese and delicate herbs that really reminds me of summer.
As the weather starts to warm up and the days get longer, I find myself craving dishes that are light and full of colour. Greek salad is seriously super easy to make and the perfect dish to bring to your next BBQ or potluck.
Here is how I like to make my greek salad!
1 long english cucumber (chopped into bite size pieces)
1 red bell pepper (chopped into bite size pieces)
1 cup of cherry tomatoes sliced in half
1 small red onion (chopped into bite size pieces)
1/3 cup of goats feta (or cows feta)
2 Tbsp extra virgin olive oil
2 Tbsp balsamic vinegar
1 tsp dried oregano (more if using fresh)
1 Tbsp fresh dill
Pinch of salt (I like Himalayan pink salt)
fresh ground pepper
Combine the 4 veggies in a big bowel and gently stir in the feta. Drizzle with the olive oil and balsamic vinegar and then sprinkle the herbs on top. Finish with a pinch of sea salt and pepper. Give the whole thing another stir and voila!!
